Orange, Oats & Sultana Cookies

Just another classic Sunday, you are trying to scrounge something up to bake for work, or the kids lunchboxes that is healthy but extra tasty?? I got you.

INGREDIENTS:

1 c buckwheat flour

1 c oats

½ c shredded coconut

2 tsp baking powder

2 tsp allspice

2 flax eggs

¼ c honey/ maple syrup

¼ c coconut oil

¾ c sultanas

¼ c cacao nibs

2 tbsp orange zest

Pinch salt


METHOD:

Whack that oven to 180°C to do its thing while you prepare the bit that the oven can’t do. Put all the dry ingredients together and mix it around. Then add the wet ingredients and mix it around some more. Next fold in the dried fruit, zest and cacao nibs, get a lined baking tray and spoon out the mixture. Make them big or make them small, cut them into shapes or spoon the whole thing for a massive cookie. Bake for 12-15 mins and then let cool for 10 mins, out of the oven of course. Dig in.
