Chocolate Tahini Cookies

So quick and easy, whip these bad boys up in 20 mins and savour that chocolate fix.

INGREDIENTS:

½ c oats

½ c almond meal

½ c shredded/ shaved coconut

1 tsp baking powder

1 tsp cinnamon

1 tbsp cacao powder

Pinch salt

2 flax eggs

3 tbsp tahini

3 tbsp maple syrup/ honey/ rice malt syrup

1 tbsp cacao nibs (optional)

2 big squares dark choc

METHOD:

Whack that oven to 180°C to do its thing while you prepare the bit that the oven can’t do. Put all the dry ingredients together and mix it around. Then add the wet ingredients and mix it around some more. Next fold in the cacao nibs and chocolate, get a lined baking tray and spoon out the mixture. Make them big or make them small, cut them into shapes or spoon the whole thing for a massive cookie. Bake for 10 mins and then let cool for 10 mins, out of the oven of course. Dig in.
