Apple Goji Muffins
INGREDIENTS:
1 apple, grated
½ lemon, juiced
2 tsp cinnamon
1 c almond meal
½ c buckwheat flour
¼ c tapioca powder
1 tbsp vanilla protein powder
1 tsp baking soda
Pinch pink salt
2 tsp cinnamon
1 tsp nutmeg
2 tbsp coconut sugar
2 flax eggs
1 tsp vanilla
¼ cup maple syrup
1 tbsp coconut oil
1 tbsp nut butter
½ c goji berries
½ c coconut chips
METHOD:
Preheat oven to 180C, and prepare muffin tray.
Combine apple, lemon and cinnamon, and set aside to rest.
Meanwhile, mix dry ingredients and wet ingredients in separate bowls.
Combine wet ingredients with the grated apple mixture and then gently fold into the dry ingredients.
Add coconut chips and goji berries. Bake for 20-25 mins.
