Smokey Grain Soup

INGREDIENTS:

1 ½ c quinoa, lentils or beans.

2 carrots, sliced in halves

1 onion, diced

½ sweet potato, diced

2 fresh tomatoes

3 garlic cloves

2 tbsp smoked paprika

1 tbsp dried thyme or 2 tbsp fresh thyme

1 tbsp dried rosemary

1 tbsp dried basil

1 tsp cumin

1 tsp nutmeg

1 tsp salt

1 tsp cracked pepper

3 bay leaves

7-8 cups water

1-2 vegetable stock cubes

1 tbsp balsamic vinegar

Handful parsley

METHOD:

Rinse grains well. In a large pot over medium-high heat, sauté garlic, onions, sweet potato and carrots in olive oil until beginning to go translucent. Add herbs and spices until fragrant. Add grains, tomatoes, stock cubes and water, salt and pepper and bring to a boil. Once boiling, reduce to low heat and simmer for 40-45 minutes. Once done turn off the heat and before serving stir through the balsamic vinegar and remove the bay leaves. Serve with fresh sourdough and garnish with parsley.
